The Winning Concept: A Mindanaoan Twist on Dagupanโs Best Our team took the humble Dagupan Bangus on a journey to Northern Mindanao. They showcased the incredible versatility of the milkfish through their signature ๐๐ช๐ท๐ฐ๐พ๐ผ ๐๐ฒ๐ช๐น๐ช๐ป๐ช๐ท, elevated by the bold, spicy kick of Palapa. The Main: Bangus Piaparan paired perfectly with aromatic Pineapple Fried Rice. The team demonstrated that this dish isn't just for formal diningโitโs also a soul-satisfying street food when paired with Roti. In addition, the team served a creative Ensalada featuring coconut strips, green mango, and pineapple, designed to create an "explosive" burst of freshness in every bite.
The Journey Continues While the heat in the kitchen was intense, our students embraced every second of the challenge. This 3rd-place finish is more than just a trophyโitโs a testament to their creativity and teamwork. Cheers to our future chefs! Thank you for putting UdD-SIHM on the culinary map!
